Hot Mexican Cook Makes Hot Mexican Soup

I promise you this soup will change your life. I am serious. When I got the recipe it was named something like Canned Chicken Tortilla Soup....Okay! How yucky does that sound. So I renamed it Hot Mexican Cook Makes Hot Mexican Soup. Cause I found that much more fitting. And yes, I realize I am not Mexican...but I cannot get caught up in the mundane details of life.

I also like to call this recipe, "How Do You Call Your Lover Boy?" And the answer is, of course, with this soup.

The culprits: Chicken (I will address your options momentarily), 1 can chopped tomatoes, 1 can Rotel, 1 can pinto beans, can northern beans, 1 can white hominy (DRAINED), 1 can corn (DRAINED), 1 can of chilies, 1 box of chicken broth, 1 package taco seasoning, 1 package ranch dressing dry.
And then there is the toppings. Not the necessities. Just optional. Kinda like accessories. But seriously, can't a good necklace and pair of earrings just MAKE the outfit? Same thing with the toppings on this soup. They were made for one another. Anyhoo: Tortilla chips, sour cream, shredded cheese, tomato, cilantro.Now chicken: I used this. Cause it is what I had. You can use thighs, breasts, or even a whole chicken. Whatever sends your boot to tappin and your hiney to wigglin. Ya know what I am sayin? I have even used CANNED CHICKEN and it is still yummy. That is so how you can NOT mess up.Start with: boil your chicken or open your cans or start your engines.
And then you have this. Just sit it off to the side. We will deal with him later.
Then I used the same pan - did not even rinse it. Cause I am a rebel like that and all.
And open up these cans.....now I left the chilies out this time cause my Twerps are eating it and they act like I put their mouths in a tanning bed for HOURS if I put those green chilies in the soup....wusses.
Dump them all in the pan. Sometimes I like to give them their space and try to segregate. Other times I make them mingle. It just depends if I have taken my Prozac or not.
Then go back to that chicken that has cooled down and use your fingers to rip it apart. I really like this part. Shh, please don't tell anyone.
Add the chicken to the pot and start pouring in some broth....about 1/3 of the box. Also, I forgot to mention you should have your burner on low during all this. Mmm-Kay?
Now add one packet of Taco Seasoning Mix.
Again, I used MILD here cause of my wussy Twerps.
And this is the SECRET ingredient that makes this soup become your new lover.
I kid you not...DO NOT UNDER any circumstances leave this out. I am telling ya....trust me.
Then mix it all together. And bring to a boil and then simmer.
And add as much chicken broth as you like. Some like their soup thick and some like it juicy. I try to please all.
Now add those toppings...and...
Hello Lover.
Come to momma.
I am straight up telling you, it is divine. I ate two bowls while typing this. Burp.
Go forth and make this...PRONTO....ANDELE. The Mexican in me says so. And then tell me if ya love it as much as me.

Hot Mexican Cook Makes Hot Mexican Soup
2 cans of chicken (or boil your own chicken)
1 can chopped tomatoes
1 can Rotel
1 can pinto beans
1 can northern beans
1 can green chilies (optional)
1 can white hominy (drained)
1 can corn (drained)
1 pkg ranch dressing mix (dry)
1 pkg taco seasoning mix
1 box (or 2 cans) chicken broth

Toppings
tortilla chips
sour cream
shredded cheese
fresh tomato
fresh cilantro

YES! when you said you were makin' hot mexi soup i was like oh lordy i hope she posts this recipe bc i am ALL ABOUT spicy hot yummy mexican (who am i kidding any-can) food!!! mmmm.

its kinda like my famous cowboy stew, which really isn't "mine", nor is it "famous", nor is it stew, its soup, only, its basically chili with corn and rotel and taco seasoning and the dry ranch dressing. you also have to top it with cheese, sour cream and eat it with either fritos or cornbread.

i found the recipe in the newspaper (actually my exhusband did) and now my HO family eats it!

do you have an extra prozac?

Yum, gonna try this. We use ground beef and call it taco soup.....yummy as well.

We do the same thing: ground beef and call it taco soup, but without the ranch packet.

I sure do wish my husband would eat soup!

I may try it anyway. Does it freeze?

ooh i had this re cipe (called something stupid like Chicken Mexicali Soup) but NOT that super secret ingredient. You are SO DA BOMB for sharing that with us. now if only i could get rotel up here. and i fear that the days of cilantro are coming to an end...(canadians only get cilantro when they screw up and meant to get parsley) sniff sniff...too far from the mexico border i guess

Funny how we all have a recipe that is similar. I make something very similar, pour it over spanish rice and call it Mexican Chicken!! YUMMY!!!

You ought to try Hidden Valley Fiesta Ranch poweder to spice it up. I use that in the roll ups. Not that you would need it. Because when we were in Germany - have I mentioned I lived there? Anyhow, when we were in Germany Judy used taco seasoning to make up for the fact we just had straight ranch so using taco seasoning AND Fiesta Ranch powder might be too much. And no this is not from work I am getting Josh for a dentist appointment because his mom has a real job - TEACHER. I just collect welfare from a cubilce on base.

Definitely got to try this recipe out. It looks delicious and sounds even better. Although I am no where near as hot sexy as you so I must change name to suit myself. How about "middle age momma make over the hill soup"?

Made your soup yesterday, but used boiled diced gulf shrimp instead of chicken and added diced avocado as a topping. We ate the whole pot. Excellent.
